High quality sockeye byproduct is sorted out of center cut wholesale portion programs. This once undervalued commodity is used as raw material for our jerky.

Cure
Tail and nape (neck) pieces of salmon are cut into vertical strips, and then cured in a mix of clean spices for up to 70 hours.

Smoke
Marinated strips are hung on smoking racks and hot smoked to tender perfection.
